Grape variety/Vinification
Palau means Palace in Catalan. We chose this name because the best defended and isolated palace of the Romans was on the same hill our grapes grow nowadays. Once you arrive at our estate you will enjoy the peacefulness and a rural landscape of woods and vineyards.
The grape varieties are separately vinificated. The grapes are pressed at a low temperature and the contact between skin and must is kept as short as possible. The first fermentation takes place, after which the wine is blended and bottled to undergo a second fermentation in the bottle.

Tasting notes
This wine has an intense and attractive redcurrant color with fine bubbles and mousse. The bouquet is dominated by berries, such as cherries, blackberries and raspberry with a base of mature plums. On the palate it is a young, fruity, fresh and totally Mediterranean wine.

Food pairing
An ideal Cava to drink principally with light salads, light pasta and rice dishes, especially seafood, raw and cooked shelfish. Also grilled fish and goats cheese are perfect with this style of cava.
