Today’s Special Appassimento

This wine is made of about 50% Negroamaro, 20% Merlot, 20% Primitivo and 10% Malvasia grapes. Today’s special is made with the traditional ‘Appasimento’ method, which uses a drying process before pressing the grapes. The grapes are manually picked at the beginning of October.

The wine had an intense ruby red color with a fruity, rich and peppery nose. The wine is well balanced with soft tannin. On the palate a full bodied wine, very intense and spicy, yet soft and full.

This Appasimento goes very well with steak, roasted meat and game.
